Self Healing Surface
One of the great benefits of end-grain boards is that when you are chopping on the edge of the wood grain, the scores made by the knives are extremely well-hidden to the point that they disappear.  The reason that end grain boards are damaged less is because when you cut on the edge of the grain you only separate the strands of wood, so the wood is able to come back together. Compare this to when you chop along the long grain side of the wood, you permanently sever the grain and it will never come back together.

Wood shrinks, swells, and cracks depending on moisture content in the environment. In addition to treating your board with cutting board cream, it's important to be sure to keep your cutting board out of standing water and to keep water from pooling on the surface. Each board comes equipped with rubberized feet to keep moisture away from the wood, in case you set it down in water on your counter.
Hygenic, Safe and Responsibly Sourced in Europe
The bond used to join the wood pieces together is Titebond III Ultimate Wood Glue which is FDA approved and the safest choice for wood products.
The wood used for our board is known as Quercus Spp. or more commonly known as European/English Oak. As the growth of trees is strongly influenced by the surrounding environment, as it is sourced from a colder environment, European Oak is known to be very strong.

It's a common perception that plastic cutting boards are the more sanitary choice in terms of cutting boards, but this couldn't be further from the truth. In fact, studies show that wood cutting boards have strong antibacterial properties, and oak is among the most bacteria resistant.
